One of the oldest methods of food preservation is drying food. Drying or preserving dried fish in the sun is a method of keeping fish in the sun to remove water. Because of the water, various micro-organisms survive and help the fish to rot. At present the of many fisher families of Bangladesh have taken this job as their profession. The 300 acre site at Najirar Tek in Cox's Bazar is the largest dry fish plant in Bangladesh, with around 5,000 workers tending to them and also drying them out on wooden tables.
